Note to self, DO NOT twick a recipe to make it healthier, just enjoy baked goods for what they are, baked GOODS!
I used 1 cup of oil instead of 1.5 cup, also didn’t have any canned pineapple, so used some sliced tangerine light syrup instead. The finished Banana Nut bread really isn’t bad, but not moist enough. It was a nice Mother/Daughter bonding experience though, we had a great time!
1 tsp. soda
1 tsp. each – cinnamon, ginger, nutmeg
2 c. sugar
1 tsp. salt
1 c. nuts (optional)
1 1/2 c. salad oil
1 (8 oz.) can crushed pineapple, undrained
1 1/2 tsp. vanilla
2 c. mashed bananas
