Pulled braised chicken w/ egg dumplings

So this is something I whipped up today, was planning to cook chestnut chicken but really wanted to do something different, so came up with something on my own. The result was surprisingly good, and almost effortlessly easy! I also went to the library to look up cookbooks for more inspirations, hopefully there will be plenty of new recipes worth mentioning in the near future!

2 T spicy soy sauce
1 T light soy sauce
2-3 T rock candy
3-4 cups of chicken stock
1 stalk of lemon grass
1 large onion, slices to big pieces
8 skinless boneless chicken thighs
1 box of frozen egg dumplings
12 chestnuts (optional)
2 T olive oil
salt and pepper

Heat up the oil in soup pot
sprinkle salt and pepper over chicken thighs
brown chicken thighs in pot, brown all sides
toss in onion, saute until soft
Add chicken stock, should cover chicken pieces completely
toss in chestnuts, soy sauces, rock candy, and lemon grass
Heat on high until boil, then turn to medium heat for about 40 minutes. Toss the egg dumplings at the end, they heat up quickly.
Use a fork to pull the chicken thighs apart to smaller pieces. Enjoy (the finished soup stock is amazing!)
