Easy Korean Seafood Pancake

Hi everyone! LONG time no see, I am not too proud to leave you guys hanging, though this is my 200th posting, and I was waiting to share something very special. Even though I’ve been cooking and testing recipes on a regular basis, but nothing seemed worthy of being the “IT” posting. In my mind since this is a big milestone, I wanted something sophisticated, something that will show I am no longer the fumbling idiot that started this blog January of 2010, make sense right? The funny thing is the recipe I am sharing today (it got lots of interests on Weeknite Meals’ Facebook page) is probably the MOST SIMPLE dish I’ve ever made in the last 2 and half years. It might not be labor intensive, but it does represent what this blog is about: Comfort food that’s simple to make on a week night, so my family and I can enjoy a tasty, healthy meal without breaking the bank.

Before sharing the recipe, I wanted to thank all of you for visiting this humble blog. When I decided to start food blogging, I had no idea what a supportive community this is, I love the warm comments my foodie friends make. It’s amazing how much I’ve learned from y’all, the pure joy I experience from watching my family enjoying their dinner is priceless, I am now able to share recipes with my Mom (who is an expert cook), discuss cooking methods, and help her out in the kitchen effortlessly when we go visit. The dorkiest thing is I find myself feeling thrilled about grocery shopping, because I know the new recipes I will be able to look up and try out, the possibilities are endless. Woo Hoo to being a cook!

OK here we go, my 200th non-sophisticated recipe, hope you all enjoy!

Ingredients:

  • 1.5 cup of Korean Pancake Mix
  • 1.25 cup of cold water
  • 1 small bag of frozen seafood (mine had imitation crabs, mussels, shrimps, squid rings), defrosted
  • 2 stalks of green onions (sliced thinly)
  • 2 T of cooking oil

Directions:

  • In a medium size bowl, mix the water and pancake mix together thoroughly
  • Heat up a frying pan, when hot, add the cooking oil, swirl to cover the pan
  • Pour the pancake mix into the hot pan, sprinkle the seafood in, then add the green onions. I used a spatula to press the seafood in since the pancake mix started to harden pretty quickly.
  • Turn the fire to medium and cook for 4-5 minutes, then flip and cook another 4-5 minutes, you can cook it longer for crispier texture, but make sure don’t burn it.
  • Voila, it’s done, cut the pancake into smaller servings and share with loved ones!

  1. Congrats on your 200th post!!! Whoo hoo! I remember I celebrated 100th but after that I forgot to keep track. Hehe. What delicious pancakes! Do you have a specific Korean pancake mix that you love? If so, let me know so I will try finding the same one. I’ve been testing Korean pancakes with different recipes (from scratch), but my husband always say “it’s a bit different from Korean restaurant”…. We have pretty authentic Korean restaurants around so my taste testers (family) are pretty picky!!!! Well I know that myself too…so I’m still testing different recipes… Keep up great work Cindy!

      Thank you Nami! I am glad WordPress keeps track of my postings, being a disorganized person, there’s no way I would know which entry I’ve gotten, haha!

      This is the first time I tried to make Korean pancake, Jon said it should be crispier the next time (more cooking time in the frying pan), but the texture and taste was pretty good. I have gotten much better about it, but it’s still hard to slave over the stove and get a “Oh it’s not the same as the restaurant…” Trinity is mostly very supportive, but there are certain food that she demands for Jon to cook (like his famous fried rice), she insists it’s not the same when I cook it, even if I follow the exact steps and ingredients, strange huh?

      Thank you so much Ray, sorry about the whole spam comment deal, that must have been very frustrating! I am happy to be back, took too long of a break from this wonderful community!

      The pancake’s texture turned out real well, of course that has nothing to do with me, the mix did all the job. I might need to make it again real soon, still having fridge issues, so no fresh produce, though plenty of protein in the freezer area, a bag of seafood is waiting to be eaten as delicious Korean pancakes!

    Congratulations for the 200th post! You were right to choose something so extraordinary as the Korean pancake for this occasion. You pancake looks fabulous! Like always, I love your night photos… I agree about healthy, comfort food etc. but I must protest against “non-sophisticated”! I think Korean pancake is very sophisticated even though simple in appearance and easy to prepare.
    Have I read “humble blog”??? You are really too modest! Or is it a joke? Your recipes are inspiring, appetising, exotic and I learn so much from your blog! As you know I have prepared some of them and loved (the lemon chicken for example is simply magic). I have always considered you a passionate, skilled cook with very wide range of culinary interests, so I cannot imagine the moment when you were a real beginner… Are you serious about 2010?
    Anyway, as a big fan of your blog I’m looking forward to seeing hundreds and hundreds more of your inspiring recipes. Keep up the excellent work!

      Thank you so much Sissi, I really meant it when I said “humble”,.. The amazing dishes my foodie friends (yourself included of course) post up are so awe inspiring, I am always thrilled when something I’ve never thought of pops up on my monitor. I especially love how you can create your own recipes, that’s something I am hoping to do more of once my cooking skills and taste develop to the next level.

      I started cooking occasionally in 2009 (due to the economy), 2010 is when I started to blog and track/test recipes, mainly so my little girl has a place to go to when she’s older and wants to cook for herself and family. Who knew I would meet all y’all wonderful foodies, what a bonus right?

      I really appreciate your kind words and support, here to many many more recipes!

      Thank you so much Daisy! I am surprised you said you can’t handle complicated recipes, your desserts are so sophisticated, they are definitely not for amateur bakers like me! Haha!

      I love it when folks try the recipes and actually like them, hopefully in the future I can start developing my own recipes more. My little girl is a great supporter of my blog, in fact she’s started her own, chronicle her day to day life.

    Your Korean pancake looks SOOO delicious! I’ve always been wanting to try Korean pancakes but just didn’t and I also don’t know why and for what reason, maybe because I’m the only one in my family who eat kimchi and I didn’t know that we could just add any ingredients we like BESIDES kimchi! LOL! 😛

      Thank you Lyn, it’s been amazing to get to this stage of my life. From a total idiot in the kitchen to being able to whip something up at 1 hour’s notice. I am no where an expert yet, but with my foodie friends’ help (yourself included of course), this journey has been so wonderful!

      That’s funny what you said about kimchi, I actually have not had kimchi pancakes, my favorite is the zucchini kind, oh my they are so yummy!
