Microwave steamed red snapper

Little girl loves red snappers, and I am very partial to fish that do not have the “fishy” taste. This dish was sort of an accident, I intended to pan fry it and dip the meat in fish sauce, but the grilling pan took most of the fish skin off, which left it very ugly to look at. Under the circumstance I decided to take the half pan fried fish and microwave steam it instead, poured a simple sauce/garnish on top to hide it’s ugliness. The result was surprisingly good!

1 red snapper. Gutted and cleaned thoroughly
2 cloves of garlic, minced
2-3 slices of ginger, minced
2 stalks of green onion, chopped
1/4 t salt
1/4 t pepper
1 T olive oil
1 t chicken flavored seasoning
2-3 T water

Slit the fish 3 times on each side, drizzle 1/2 T olive oil over both sides. Sprinkle salt and pepper on each side evenly.

Put the fish on a microwave save dish, cover with wrap.  Microwave on high for 8-10 minutes (I did flip the fish half way through)

In the last 2 minutes, heat up 1/2 T olive oil in a small pan, stir in ginger and garlic until fragrant, add the chicken flavored seasoning and water, stir evenly. Add the green onions last. When the fish is done, take it out of the microwave and drizzle the sauce over it. Serve with white rice.
