Coconut Flavored Almond Tofu

Went to the Asian market this morning and pass by these Almond Tofu powder mix. It comes in many flavors: almond, mango, coconut, etc. The steps are simple, mix the powder with some water and let boil, then add milk (I used unsweetened soy milk), and refrigerate for a couple of hours. Add some canned fruit and you have a refreshing and low calories dessert. My little girl loved it!

      Logans! We don’t normally have access to fresh ones here, though from time to time we get to buy Lycee from Mexico now. I might actually make some almond tofu tonight, yum!

        I always used the canned ones too and longans are only available here when in season. Save a little portion for me! 😉
