Tres Leches Coconut Macaroons

Been thinking up ideas for this year’s Christmas neighborly gift giving, and macaroons popped into my head. Didn’t realize how simple it is to make such beautiful and delicious pastries (are they considered as a pastry?) Since the original recipe is a bit too simple, I decided to look around for something a little more fancier and came up with this idea, hope you guys enjoy!

  • 14 oz bags coconut flakes, I would prefer to have the unsweetened ones, but couldn’t track them down
  • 1/2 can 14 oz cans sweetened condensed milk
  • 1/8 cup sour cream (I used low fat)
  • 1 Tablespoons Half & Half.
  • 1 teaspoon of vanilla extract

Pour the whole bag of coconut flakes into 1 large container, add the condensed milk, sour cream and half & half, mix thoroughly, I read someone had used food processor and the result turned out good, though I prefer mine coconut flakes to be seen, so hand mixing did the job. Line cookie sheets with parchment paper, or grease generously to prevent sticking. Preheat oven at 325. Use ice cream scooper to scoop the mixed ingredients and place them onto the cookie sheet, should make about 12 big macaroons. Bake for 30 minutes. If you prefer, melt some dark chocolate and drip over the finished macaroons, or dip the base with melted chocolate. Voila! Gift giving made easy and delicious!
