Black Bean Garlic Fish

Went to my favorite Asian supermarket last weekend and got these wonderful fresh basa fish fillets, I always thought it’s a type of flounder, but after doing some research I realized basa is a type of catfish, the strange thing is I find most catfish hard to swallow, the taste and smell is just too “fishy” to me, but basa is so mild, it almost taste like very tender pork!

1 lb basa fish fillet (cut into pieces and marinate with 1/2 tablespoon corn starch, 1 tablespoon of rice wine)
2 tablespoon black bean garlic sauce
1 small onion (cut into bite size)
2 stalk scallions (slices in an angle)
5 slices fresh ginger
1 teaspoon fish sauce
1 teaspoon sugar
1/2 teaspoon sesame oil

Method:

  1. Heat up the wok and add in some cooking oil.
  2. Add sliced ginger and onions, stir fry them until aromatic.
  3. Add in the fish and do a quick stir.
  4. Add the black bean garlic sauce, fish sauce, sugar, and sesame oil and stir fry until the fish is cooked.
  5. Toss in the chopped scallion and do a quick stir, dish up and serve hot.

    which asian supermarket did u get these basa fish fillets? wel-farm, ranch 99?

    I got the basa fish from H Mart close to Korean town, have you ever been?

    never been to H Mart. that is so far away. i live in sugar land, so we shop at wel-farm and that new ranch 99 on hwy 6. don’t think they sell basa fish fillets. shucks. wanted to try this dish.

    You can definitely find frozen basa fish fillets at the freezer section, I know welfarm has them, doesn’t taste any differently to me. These fish are very mild tasting, and reasonably priced!

    when you use a wok, is it a non stick wok or a regular wok?

      I use a non-stick wok, though sometimes I do use a flat bed frying pan for dishes that do not require as much room. The non-stick wok normally is the best bet since I can stir to my hearts content without food pieces flying all over the kitchen!

    great recipe! i used a non-stick wok as well. couldn’t find basa fillets at ranch 99. used frozen swai fillets instead. still tasted great! 🙂
