Bought a bag of pre-washed stir fry vegi and defrosted the left over frozen scallops for this easy to make dish, the sauce was the real star. Little girl has been enjoy broccoli due to the way I’ve been cooking them, every Mother’s dream!
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon dry sherry
- 2 clove garlic, crushed
- 1/8 teaspoon ground black pepper
- 1 1/2 tablespoons cornstarch
- 1 bag of pre-washed stir fry vegetable
- 1 pound of scallops
- 1 tablespoon of oil
Mix marinate, toss cleaned scallops into it, soak for 15-30 minutes
Heat up oil, stir fry vegetable (add a little water and cover the wok, it will steam the vegi), about 3 minutes
Remove scallops from marinate, stir fry with vegi, about 1-2 minutes
Dump all marinate into the wok and toss for about 1 minute, serve with rice
