So who is a fan of “bitter melon”? As a kid and young adult I hated eating them, but my Mom always said they are good for “cooling down” our bodies. My parents’ organic “farm” is doing so well, 4 beautiful bitter melons were waiting for me the last time I visited. I’ve decided to stir fry them tonight and Wow! The flavor was so good I hardly tasted any bitterness, count me in as a convert!
2 white bitter melons, thinly sliced
1/2 pound of pork tenderloin, thinly sliced
1 T oil
3 cloves of garlic, minced
dash of pepper
Marinate:
1 t corn starch
1 t olive oil
1 t soy sauce
1 t rice wine
Sauce:
1/4 cup of water
2 T oyster sauce
1 T rice wine
1 t corn starch
2 t sugar
1/8 t red pepper flakes
Marinate pork with above ingredients, put aside
Heat up oil, stir in garlic when hot, stir until fragrant
Toss in marinated pork, stir fry until pink color’s almost gone. Take out of the wok and put aside
Toss in bitter melon slices, stir fry for 3-4 minutes, you can add in a little bit of water and cover the wok to steam them tender, add the pork back in and stir fry for 1-2 minutes, then add the sauce in, let it sit for 15 seconds or so to thicken, then stir fry to coat the melon and pork evenly, sprinkle a dash of pepper on top and serve!
