My Mama went to my Uncle’s property to pick pecans, being at Texas and Fall is pecan season, there were abundant to pick from. Being the great Mom that she is, when I received the pecans they were already shelled and ready to eat! I decided to make a salty batch and a sweet batch, gonna share with my parents this weekend. The salty ones were super easy to make, just melt some butter (half a stick), sprinkle sea salt and garlic powder, toss well then bake for about 30 minutes in 300 degree oven. The following is the recipe for the sweet batch, very yummy!
2 teaspoons cinnamon
1/2 teaspoon salt
1 egg white
5 cups whole pecans (walnuts, brazil nuts, almonds)
Preheat oven to 300°F. Combine sugar, cinnamon and salt. Whisk egg white until frothy and add the nuts. Toss until well coated. Add dry ingredients and stir well.
Spread nuts on a cookie sheet lined with foil, in a single layer.
Bake for 30 minutes.
Cool and store in an airtight container. Can be frozen.
